Recipe of the Week-Salmon Patties

My good friend, Krista made this recipe up and I wanted to share it with you! We love them for lunch and supper. :)

Salmon Patties

6 small cans of salmon
1 large onion
1 red bell pepper (I also used half of a green pepper)
1 stalk of celery
3T. Dijon mustard
1/2 c. mayonnaise
2 eggs
3/4c. Parmesan cheese
2 t. garlic powder
1 t. ginger
2T. butter
Salt and Pepper

Directions:
Saute onion, peppers and celery in butter with garlic, ginger, salt and pepper.
When veggies are still a little crunchy, remove from heat and set aside.

Drain salmon and combine with mustard, mayo, eggs, and cheese.

Stir in veggies and mix everything thoroughly together. (If mixture is dry add more mayo and if it's got to much liquid, add more cheese.)

Take about 3T. of mixture and form into small patties.

Bake in oven at 350 degrees until lightly brown. These can be frozen and reheated as needed. :)

Recipe of the Week-Poppy Seed Chicken

I am finally able to post a new recipe of the week! We have had computer problems with the one computer that we can upload our pictures from the camera. I like to show pictures of my recipes when I post them, so everyone can see what they are going to make. :) Anyway, this chicken recipe has been a family favorite for a very long time. I hope you enjoy it! :)

*Poppy Seed Chicken*

~Serves: 6-8 people

~Cooking Time: 1 hour-1 hour and a 1/2

Ingredients:

6-8 chicken breasts

1 can cream of chicken soup

1 can cream of mushroom soup

8 oz. sour cream

1 tube Ritz crackers, crushed

1 stick butter, melted

2 T. poppy seeds

1/4 c. sliced almonds

Directions:
Arrange chicken in a 9x13 pan. Bake chicken for 20 minutes at 350 degrees. Mix soups and sour cream then spread on top of chicken. Mix the butter and cracker crumbs together. Then, sprinkle cracker crumbs, poppy seeds, and almonds on top of the soup mixture. Bake 45 minutes or until bubbly.
