White Chicken Chili Recipe

This is what we're eating right now for lunch.  It's a favorite of ours.  Serve it with some warm crusty bread, as supper or lunch, all year round.  Yes, it's that good… January 2011 part 2 030Soooooo, would you like the recipe?  :)  January 2011 part 2 031Ingredients:

3-4 chicken breasts

4-6 cups chicken broth

2 T. chopped garlic

1 large onion- chopped

1 8oz. Ortega green chilies

2 teaspoons cumin

4 cans of Great Northern beans- drain and rinse

2 T. oregano

1 teaspoon pepper

8oz. sour cream

4 cups Monterey Jack cheese

Directions:  Cook chicken breasts and cut into pieces.  (Not too small, though).  Put chicken, broth, onions, garlic, spices, beans, and chili peppers in large pot.  Bring to boil and simmer 30 minutes.  Make sure you have a lot of chicken broth, so it doesn’t stick.  Stir in cheese, salt, pepper, and sour cream until creamy.  Serve warm with delicious crusty bread right out of the oven. 

*You can also prepare all of this and put in crockpot on low for 3-4 hours.
